The KRO/NRCV program BinnensteBuiten recently made a wonderful report about the mullet and the Thool family Bout, who know this fish like no other. In the Zeeland waters, Job, Miranda and Sjaak fish for mullet, a less well-known fish species. Mother Miranda turns the roe (the fish eggs) of the mullet into the bottarga, praised by star chefs. Bottarga is a fish specialty from Sardinia, and Miranda is the only one in the Netherlands who makes this exclusive product!
